East-West Green Leafy Vegetable Comparison: Kale, Spinach and Lettuce

A green leafy vegetable may be called by the same name in the East as well as the West. However, in the West and only the leaves are eaten, and the stems are discarded; while both leaves and stems are eaten in the East. Moreover, the leafy greens are also prepared differently. In the West,the curly kale is braised with other whole foods. As for Western spinach, the leaves are pan-cooked while the leaves are discarded. In the case of western lettuce, the leaves often double up as wraps as as a bed for other foods. In the East, the Chinese kale is often blanched or stir-fried. Meanwhile the Chinese spinach may refer to the amaranth greens or Malabar spinach, both of which are cooked with leaves and chopped stems. As for the Chinese lettuce or celtuce, the stem is either pickled or blanched while the leaves are eaten as a stir-fry.
